Why is dark chocolate healthy? Well, a significant portion of dark chocolate is made of cocoa, a seed with an extensive and impressive nutritional profile. It can be used as a healing remedy and is a source of many nutrients the body needs. The dried and fermented seed of the cocoa fruit, or cocoa, is used to make confections rather frequently. Rustico range of Dark Chocolates
These bars are crafted with roasted cacao nibs, cacao butter, and basic, whole-food components utilising our own blend of the best cacao. We don't make chocolate with flavours added; instead, we create chocolate with components that alter the mouthfeel, flavours, and sensory qualities of each individual bar. We use a low-heat and low-sheer stone-grinding technique to preserve the health benefits and unique flavour profiles of cacao in our dark chocolate bars, which are all freshly prepared, bean-to-bar, in our Toronto kitchens.
Origination of our chocolates?
Since we produce all of our chocolates from scratch using freshly roasted cacao beans, *Rustico Chocolates* is a bean-to-bar manufacturer. In our kitchen in Toronto, Ontario, we roast, winnow, stone-grind, and temper our cacao.
The cacao used in *Rustico chocolates* comes from communities in Mexico's Oaxaca and Chiapas. Additionally, we source from a number of social and ecological initiatives in Guatemala, Ecuador, and the Dominican Republic. For more information, visit the "Our Community" page.
Almond in your chocolate bar?
You are looking at a complete, roasted cacao bean, so don't be alarmed. This is the ingredient list for chocolate! As a teaching tool to share the history of chocolate, we embed a single whole cacao bean on the back of our 75% Dark chocolate bar. Many people in the north have never even heard of a cacao bean, much less seen or tasted one. Rest assured that no nuts are used in any of our production or products.
